I have never had much success growing my own bell peppers, so when there’s a great sale, I like to stock up and preserve them for future cooking use.  This weekend, I purchased 10 huge red bell peppers.  Keeping three fresh, I washed and sliced the other seven.  I like to cut the peppers into long ribbons because that’s how I use them in fajitas.  Once frozen, they’re easy to break into smaller pieces if I want to use them in scrambled eggs or on a pizza.  I then placed the pepper strips into quart size freezer bags.  Using an old ice cream bucket to hold the bags of veggies helps keep my freezer organized.  Ideally, I like to have a freezer full of red peppers, onions and green peppers.  Having these veggies sliced and ready to go makes for easy prep for future meals, and buying them on sale keeps your grocery bill down throughout the year while preserving the vegetables in season when they are at their best.

20160527_100233It’s amazing what can happen when you miss 1 day of inspecting the garden! Oh my goodness can zucchini grow unbelievably fast!  I’m eyeing this beautiful giant for the first Chocolate Zucchini Cake of the season. Once I am able to get a bag of chocolate chips, that green veggie is cake!  My hope was to run to the grocery store this morning, but just as I was ready to leave, it began raining again.  With recent flood warnings, slick roads, and idiot drivers, I decided to stay home.  No cake today unless I forgo the chocolate chips…

Sid and I sincerely hope everyone has a safe and fun Memorial Day weekend!  Thank you to all who have served and to those currently serving our country.

20160526_105814 20160526_110124 20160526_110646

If you’ve been following along with the comments on the blog, you saw a great new tip on how to control ants inside the house this time of year.  I confess, I’ve been dealing with them lately too, so I’m giving the suggestion a try.  The original recipe makes a large batch, so you may want to cut it in half.  Either way, you’ll probably end up storing the extra in a jar until needed.

Mix 1/2 cup of sugar and 2 1/2 tablespoons of powdered Borax in 1 1/2 cups of warm water.  Stir until dissolved.  Dip cotton balls or scrunched up paper towels into the mixture.  Mom dipped 4 cotton balls and placed one in either a milk jug lid or soda bottle cap.  I didn’t have any cotton balls, so I soaked a paper towel in the mixture and set it on a larger lid–perhaps I should have tore the paper towel into pieces and placed them in smaller lids.  Time will tell.  Set the lids near the ant run.  Keep away from your pets.  This is not Sid safe.

My trial is just beginning.  Mom replaced the cotton balls the next day and was rid of ants in a day and a half.  I’m hoping I have the same level of success.

20160525_113825We had a catastrophe in our house this morning.  Sid loves for me to chase him all around, and today was no exception.  It was great fun until we misjudged each other’s next move and collided.  Sid’s face met the front of my ankle pretty hard.  I followed Sid as he went into the guest bedroom and curled up under the bed.  My heart broke as I watched his nose begin to bleed.  I couldn’t believe it, and I felt horrible for him.  He was sure to heap on the guilt by keeping his distance.  I doted on him and even offered him his favorite iced water.  Eventually he rejoined me in the office where he is now snoozing away in his cat throne.  While he’s still recovering from his Marsha Brady “Oh my nose!” moment (poor baby!), I do expect him to be begging to play again soon.

20160522_143207 20160522_143116 20160522_143138

My garden appears to have played host to a Saturday night rumble, and boy did the fur fly.  Judging from the tufts of gray fur left behind, there’s a naked cat roaming the neighborhood.  Ironically, the scuffle centered around the Valleycat tomato plant.  Two green tomatoes and a small branch were knocked off the scrawny plant onto the ground.  The Valleycat vandals didn’t stop there though.  They dug in Sid’s purple pool–my “Save the Bees” flower garden that was just recently planted.

When I discovered the scene of the crime, I was surprised that Sid stayed away from it.  I figured my curious little super sleuth would have been the first to investigate.  Granted, it was hot outside, and I noticed he was sticking to shady spots.  The garden area was exposed to full sun at the time.

While I’m not thrilled with neighbor cats invading Sid’s turf, no real damage was done by the cat fight.  Mostly I’m glad Sid was safe inside with me.  For that, I am grateful.

Soles with Goals:  494.3 miles reported!

There are just some things in life I truly dislike having to spend money on–toilet paper, replacement razor blades, etc.  I suppose you could categorize my pet peeve purchases as costly necessities.  So yesterday when I came across store brand replacement razor blades–compare to my kind of razor–for a fraction of the cost, I was elated.  My hopes were dashed this morning when I quickly realized they were in no way compatible with my razor.  Arggg…so now I wasted that $9 and still have to go back and pay the $22.  Lesson learned.20160522_105738

20160522_113525Apparently I’m not the only one who has made this mistake.  I was going to a different Walmart this morning for something else and decided to see if it had the razor that went with the 6 blades I already purchased.  If the other store had this sign, I completely missed it.  I was in a hurry at the time.  The Equate razor plus two blades was only $5.72 so I purchased it to salvage the opened box of blades I had at home.  It was still cheaper to buy the new razor and box of generic replacement blades than purchase the name brand blades.  Now whether or not I like the generic product will truly determine if I stumbled upon a money saving opportunity or if I just plain stumbled.

What got me back out this morning was actually a combination coupon and Ibotta offer that expires after today.  Ibotta has a $3.00 rebate when you buy both the TRESemme Beauty-Full Shampoo & Conditioner.  Looking through what I believe was one of last week’s coupon circulars, I found a BOGO FREE coupon for them.  Knowing this would complete my Ibotta May Boost bonus, I couldn’t resist trying the new conditioning first system for FREE!  Perhaps deals like this are why I can’t stand spending $15+ on toilet paper and $20+ on razor blades.

20160518_124611Coach Table Runner’s Fitness Tip of the Day:  On the days you don’t feel like exercising, convince yourself to workout for only 10 minutes.  If after 10 minutes of physical activity you still don’t want to exercise, go ahead and stop.  As your ever-wise coach, I predict that 93.7% of the time you will continue the workout, since motivation is often the biggest hurdle standing in your way of getting fit.  Making the 10 minute deal gives you the motivation to get started.  After that, you’re in workout mode.

Rain has been gushing from the sky for hours now.  Water is standing in the yard, and the rain barrel is overflowing.  Unfortunately, it seems to either be flood or drought here and never much in between.  Once the rain stops, the intensity of the sun rapidly dries the excess water and soon the ground is cracking from lack of moisture.  From my experience, that’s life in Central Texas.

Sid inspected the beets and beans last night before today’s excessive rain.  The green beans appeared to be doing especially well.  I’m really glad Sid was able to get some fresh air yesterday, because he’s going to be cooped up in the house today.  So far, he seems to be taking advantage of this dreary day with long lazy naps.  And on a day like today, I don’t blame him.

20160510_093812Spring and early summer are often filled with celebrations.  Graduations and weddings draw family and friends together to share the joy of new beginnings.  As we gather, food is typically at the center of it all.  And at the side of that decadent cake sits the ever present nuts and mints.  Instead of simply opening a bag of mints, why not take a little time to create beautiful and delicious homemade Cream Cheese Mints?!  They take minimal ingredients and can be made ahead of time since they freeze well.  Making your own, you can incorporate your theme into the colors and shapes of your mints.  And did I mention they are delicious?  You can find the recipe for Cream Cheese Mints on the Celebrate! page of the main Recipes section.

A great deal of rain fell here in Central Texas over the weekend, but Sid made sure he was able to get outside between the showers.  With so many birds to watch and new plants to inspect, he was up early and insistent on making his rounds.  I walked while Sid was busy chasing lizards and getting harassed by a squirrel.  That nasty little rodent really does make every effort to torment poor Sid.  Even I can see that.  I’m just waiting for the moment Sid snaps and goes barreling up the fence after him.

Sid’s longing to explore the great outdoors has helped my mileage output for Soles with Goals.  Overall, I am pleased to say that the team is doing great.  Several members have met or exceeded their goals both weeks.  The extra mileage is helping bring us toward our collective monthly goal.  Right now, with the mileage that has been reported, we’re 41.52% of the way there.  Keep up the good work team!

20160511_181157 20160511_181747 20160511_181749

Last night’s stroll around the farm led to a rather exciting discovery.  I was delighted to see that new tenants are moving in out back into their very own fixer upper.  Unfortunately, it appears someone had a little trouble fitting some of his construction materials through the front entrance.  For some reason I find this absolutely hysterical.  The birds are clearly just as imperfect as we are.  I’m sure Mrs. Tweet had something to say to Mr. Tweet about the situation.  Shortly after I discovered signs of habitation in the old bird cottage, the new residents made an appearance.  They seem like a very nice couple, and I hope they have many happy years in their new home.

This morning while I was walking and Sid was making his rounds, I saw Mr. Tweet busy hauling twigs and leaves into his new home.  Renovations were moving ahead vigorously until the welcome wagon interrupted the progress…

Soles with Goals:  195.4 miles reported!

20160510_212418As I gazed out the window into the darkness last night, I was startled as my eyes were met by another set of eyes staring intently back at me.  A rather odd feeling came over me as I began to make out the creature’s shape as it was peering down at me from the roof.  How strange and somewhat humorous this was, in my mind anyway.  Do other people have cats prowling around on their roofs?

My dear sweet Sid was safe inside with me, and my hope that he would remain oblivious to the peeping tom came to pass. When I opened the garage door to take the garbage can to the curb awhile later, I saw two cats who had been conspiring in the cul-de-sac run in opposite directions.   One I recognized as the cat that has been tormenting Sid at night through the windows, and I was not familiar with the young orange tabby with whom he was consorting.20160501_171100

I think our night time prowlers explain some of Sid’s recent behavior.  Sid has been pushing his boundaries which I now see as him trying to reclaim his territory.  Poor Sid has a very protective mom, and he tends to get in trouble for venturing to the other side of the fence.  I suppose I need to show a little more understanding to his cat instincts.  Sid is pretty cautious and doesn’t venture far from the house.  He really is a good boy.  I just worry about cars, strangers, and other animals.  I don’t want him to get hurt.  And of course, I’d hate to have to call the fire department to get him down from the roof!

Sid and I welcomed an exciting and tropical addition to the farm last night.  Our friends, originally from Trinidad, gave us a Cavendish Banana Tree.  Learning a bit about the tree as it was being planted, I find it to be a pretty intriguing plant.  Cavendish is a fruit bearing variety.  However, that’s far from a guarantee in Texas.  While our winters are mild, they are cold compared to the banana tree’s native year-round tropical climate.  Yet, I cannot help but feel giddy about even the slightest possibility of growing my own bananas.  How amazing would that be???

According to my banana tree benefactor, the main stalk of the plant will die back each year and send out suckers to the side.  So if successful, I could yield a bunch of banana trees over the years.  Its prolific tendency has made the banana tree a symbol of perseverance.  Around our farm, it shall serve as a reminder to never give up.  I really do hope this fascinating new tree thrives so I can witness its remarkable growth cycle.  That, and I’d really hate for the “immortal” tree to die on my watch.

Yesterday morning I harvested three small zucchinis.  They were delicious sauteed in olive oil along with carrots and onions.  The first taste of the season’s produce always makes me hungry for more.  I cannot wait until the tomatoes ripen.

The rain has not only been good for the vegetable plants but has also done wonders for my flowers this year.  Much to my surprise and delight, the snapdragons I planted in the front urn last year returned and had even spread along the ground beside it.  Taking advantage of this unexpected gift, I transplanted several into my back flower garden and a couple into pots which go in a decorative holder.  I planted those snapdragons in honor of the “Queen’s” visit last year, so they hold special memories for me.

I love being able to walk around the farm and see so many reminders of special moments.  Every time I look at the mulched vegetable garden, I smile and remember how much fun it was to have my aunts and parents working together to help me improve the landscape.  Even the bottles in my bottle borders remind me of my cousin’s visit, gifts from dear friends, and good times together.  As “Hooty” towers above the vegetable plants scaring away the birds, I think of my brother who remembered my birthday with this great bobble-headed owl.  For me, these are the touches that make my little corner of the world home.

Time to stock the freezer with strawberries!  I purchased 4 lbs this morning.  After washing and slicing all of them, I kept some out and sweetened them with sugar.  They tasted delicious on a piece of my freshly baked Hot Milk Sponge Cake.  The rest were placed in small containers and put in the freezer for future enjoyment.

While at H-E-B, I also purchased some soil.  I then returned home and proceeded to fill in Sid’s beloved trenches while he was busy catching a lizard and hopping the fence.  He’s not going to be happy when he sees what I did!

Back in January, I never would have thought having a tree fall would turn out to be a blessing.  The branches worked brilliantly as a border around the vegetable garden, and most recently, I’ve enjoyed turning a couple of the larger sawed off sections into fun planters.  First, I washed up some old plastic pots that were just lying around unused.  Then I screwed them into the stumps.  This morning I stumbled across clearance plants at Walmart.  I was absolutely elated as I’d been looking for inexpensive 6-packs of petunias (or something similar) to no avail.  Much to my delight, I found bright red petunias and verbena on clearance for $.91 a 6-pack!  They weren’t the healthiest of plants, but I dug through the trays to find the best ones.  I think I can revive them with a little TLC.

Happy Cinco de Mayo!

While piecing together my rock border this weekend, I extended it out in a few areas to achieve balance.  This left a valley between where the original rock held the dirt and where the new stone was placed.  I intend to fill it in with additional soil eventually.  In the meantime, Sid loves it in the trenches.  Always one to relish the fun of a fort, Sid lays low peering over the rocks watching the birds.  Good times for the farm cat!

“The Summer of the Zucchini” appears to be well on its way.  I am looking forward to enjoying warm Chocolate Zucchini Cake fresh from the oven, trying out a new recipe for a cream of zucchini sauce for pasta, and of course just sauteing it up in olive oil.  Yum!  Assessing the number of zucchini plants I have (20 at last count), my aunt and cousin have been laughing at what they see on the horizon for my summer and have affectionately been calling it “The Summer of the Zucchini.”  Considering I usually only plant about two zucchini plants, this summer could hold an interesting bounty.  Last night, I harvested the first jalapeno from my garden.  It’s always exciting to start enjoying the fruits of your labor.  It’ll be months yet, but I can’t wait to indulge in this year’s lemon crop.  The tree seems to be off to a good start.  Hopefully this is just the beginning of an overall plentiful harvest and not just an overabundance of zucchini!

20160430_110917 20160430_111017 20160430_111058

Trudging through the mud, I carefully selected my pieces of native chopped limestone at a local landscape yard.  With a limited supply of this particular variety on hand, it was a challenge to find small enough pieces in the appropriate shapes to finish the border around my expanded perennial flower garden.  Determined (and utilizing the muscle of a helpful young employee), I eventually found just enough pieces for my project.  That’s my pallet on the left.

In my opinion, the stone at the landscape yard has so much more character than that found at a big box store and is reasonably priced by the pound.  Once you’ve selected your stone, a forklift comes and picks up your pallet and takes it to the scale.  My collection of unique native limestone chunks weighed in at just under 400 lbs.  And so my weekend warrior project began.

Because some of the stones were much larger than I had planned, I had to rework the entire border.  As the sun beat down on me that afternoon, I configured, reconfigured, and reconfigured again.  It took hours, but I eventually solved the big heavy puzzle.  In the end, I was exhausted but very pleased.

Let the mileage tracking begin!  I confess getting out the door and moving didn’t go as smoothly as I would have hoped.  Initially, a friend was going to walk with me this afternoon.  Unfortunately, she was unable to make it today.  So with conversation tabled, I wanted to get my new bluetooth earphones ready to use.  That took some time, but I absolutely love them!  Of course once I finally open the door to leave, Sid runs outside and has no interest in going back into the house.  After he’d rolled around in the dirt and scratched his back on the concrete for awhile, he eventually ran back inside.  I was finally on my way.20160501_105753

Within a tenth of a mile, it began to sprinkle.  Really???  It felt good, but I was concerned about my phone which I had to remove from its protective case to fit in my armband.  Debating whether or not I should turn back, I pressed on anyway hoping for the best.  Aside from a few scattered raindrops, it was pleasantly cool and overcast.  The wind was fairly strong at times but felt refreshing.  Feeling pretty good, I decided to attempt intervals of walking and jogging.  My pace began to slow as I was nearing the end of the longest straight.  I was quickly losing steam.  Oooo…bicycle club on a group ride passing by…I felt a sudden pep back in my step.  Pride is an amazing motivator.  Overall, it was a good workout.  Unfortunately upon arriving home, I discovered Sid had hacked up a hairball on the carpet while I was gone…

Not every day is going to be the perfect workout day.  Things are going to happen.  Give it your best and continue to put one foot in front of the other!  You’ll be glad you did.
