20160628_125807I had to make an emergency run to the grocery store this morning.  Word to the wise, don’t ever make homemade salsa if you don’t have any tortilla chips in the house!  Late yesterday afternoon, I decided it was time to take care of the tomatoes Sid worked so hard on to help ripen.  I washed them thoroughly and then dipped them in boiling water to ease the peeling process.  After the salsa boiled 45 minutes, I was confident the tomatoes were cat funk free.  I have to admit, it is the best Coco Farms Garden Fresh Salsa I have ever made.  Perhaps it was Sid’s help that made this batch extra delicious.  Opting for my brother’s favorite salsa dipping chips, I finally enjoyed the garden fresh salsa on tortilla strips for lunch today.  Num!

20160627_090115The Frog Days of Summer:  As I watched the sun begin to go down last night, I thought it might be a nice time to go outside for some fresh air and to let Sid play.  I checked the current temperature on my phone and decided 93 degrees was still too hot.  This morning, upper 70s sounded much more appealing, but the humidity was terrible.  I’ve been hearing of lovely 75 degree days up north which sound amazing.  If you recall the days I was reveling in the beautiful early spring weather and being sent pictures of snow from Wisconsin and Missouri, the tables have definitely turned.  It is now your time to enjoy gorgeous weather while we’re getting scorched.  I did manage to walk the yard this morning while Sid played with his baby frog friend.  If you look closely in the picture, you might be able to see it just to the right of his paw going in for the smack.

With the heat index, it’s been about 100 degrees here in Central Texas, and the humidity makes the increased temperature miserable.  While my head completely understands the necessity to drink lots of water, my stomach has never been on board with the concept.  I have no problem consuming plenty of water during a workout, but drinking water throughout the day often nauseates me.

Knowing my concerns about hydration, my aunt shared a great suggestion that she uses.  Every morning, she fills a big pitcher of water and sets it on her kitchen counter.  Her goal is to drink the entire pitcher each day.  I’ve been combining her method with an idea I saw on Central Texas Gardener.  They suggested adding fruit and herbs to ordinary water to help you consume more h2o throughout the day.  The flavor combinations are countless!

Since I have a garden bursting with basil and a freezer full of strawberries, that’s where I began.  Based on recent experience, I absolutely have to echo what I’ve heard on cooking shows for years.  Place your basil in a glass of water to keep it fresh.  After picking some sprigs of basil on a hot day, they were completely wilted by the time I took them in the house.  Sticking them in a cup of water (as you would cut flowers) restored them right back to healthy leaves.  Basil does not like the cold, so do not store in the refrigerator.  Wait to wash the leaves until you are ready to use them.

Wash and squash!  To make my Strawberry Basil Water, wash the basil leaves and squeeze them in the palm of your hand.  Then place into a pitcher.  Next, add your strawberries.  Personally, I like the fruit flavor to be stronger than the herb taste, so I proportion it accordingly.  Fill the pitcher with water and place in the refrigerator overnight or for a few hours.

While I have yet to be able to down the entire pitcher in a day, using these two strategies combined, I am drinking more water.  Adding the fruit and herbs definitely helps, and as an added bonus, it seems to deter Sid from drinking out of my glass as well.

My tomato crop has been plagued with pests this year.  The only way I’ve been able to successfully thwart the devious intentions of the gluttonous varmints is to pick the tomatoes before they are ready and let them ripen inside the house.  When I hesitate even a day to harvest, as in the case of Sid’s prized Valleycat tomato and this remaining morsel of a Lemon Boy tomato, I lose the fruit to bugs or whatever critters are munching at night.

Fear not, inside or out, the farm cat is always on duty and dedicated to his job.  So why should I have been surprised to find him hard at work this morning?

Sid and I had our 2 seconds of fame this weekend.  Having a photo from our farm shown on Central Texas Gardener was pretty exciting for us.  We watched twice on Saturday and once on Sunday.  My secret dream has been to develop my backyard into a garden haven worthy of a feature segment on CTG.  While I will continue striving for a lovely backyard that Sid and I will enjoy, I know it’ll never be master gardener level.  So for our photo to be forever attached to Daphne’s “Down To Earth” (Golden Barrel Cactus) segment is fulfillment enough of that dream.

Happy Father’s Day!

At age five, I wanted to be the first female Kansas City Royals baseball player.  I just loved playing catch in the front yard after Dad would get off of work.  It was so much fun, I didn’t mind that my older brother got to play too–except for the time he threw a big heavy bat at me.  Actually, I’m sure Dad wasn’t around when he did that.

As I grew older, Dad and I always watched Quantum Leap and The O’Reilly Factor together.  And even after I moved to Texas, I knew every Monday night as I sat down to watch Castle, he was doing the same.  An exchanged text or two would confirm that fact.

I inherited his migraines and the obsessive need to check the door five times just to make sure you really did get it locked.  But who else could you always count on to give you that box of chocolates for Valentine’s Day or drive the riding lawn mower to your house to mow the lawn for you?  No one would do that, except for Dad.

So, Dad, thanks for being you!  Happy Father’s Day from your little princess!

20160615_153740Well, today, I finally did it.  I ventured out to the grocery store in an effort to replenish the staples.  Hopefully, I’m stocked up for a while now.  I really enjoy trying local products so was quite excited to find flour that was milled in San Antonio.  Much to my delight, its price had even been reduced (hopefully that’s not a bad sign).  With the zucchini from the garden piling up, I think it’s time to bake another Chocolate Zucchini Cake and test the new flour.

Eggplant blossoms brought beauty to the garden this past weekend, and I’m hoping they’re a sign of eggplants to come.  I have never grown eggplant before, and I’m curious about how one actually grows.  Earlier this spring, the green bean plants produced their lovely blossoms, and since then, have provided a good number of beans.  These delicious green legumes have been a delightful treat, and I’m guessing will be my favorite yield from this year’s garden.

Blech!  Without thinking, I just drank from my glass of ice water sitting next to me.  It was a good refreshing glass of water, as Sid will attest since he drank out of it moments before I did.  Now, don’t think for a second I didn’t serve him a nice fresh glass of his own, of which he drank quite a bit before sampling mine.  He’s just not going to miss out on anything.  That’s my boy!

20160610_113212The temperature outside is climbing rapidly and that means we do have to pay extra attention to staying hydrated.  Whether you’re working outside or putting in your miles for Soles with Goals, keeping water close by is important.  Several years ago when I was training with a local running club, carrying water after we reached a certain distance was mandatory.   There were no ifs, ands or buts about it.  That was the rule.  And while I find carrying water annoying, it is a requirement I have to respect.  My health and well-being was their priority.  Yeah, our group got mocked a bit by the more elite running club in town–they had people stationed to give them water during their training runs.  But, I think the reality is most of us don’t have staff or volunteers along our routes, so there’s something to be said for self sufficiency and training intelligently.

The summer sun can be especially brutal, and this is the time of year I have no interest in being outside.  (I really am a fair weather gardener.)  Consequently, poor Sid isn’t getting to go outside as often, despite his hydration efforts.  While I support him drinking lots of water, I am not a fan of sharing our beverages.  Hence, the pink Camelbak bottle made its appearance for the rest of my day’s water consumption.

Soles with Goals:  124.29 miles reported!

20160609_124507Right now, I am completely out of a lot of cooking essentials.  I have no flour, garlic, olive oil, onion or desire to go to the grocery store.  Yeah, I’ll probably end up being one of those little old ladies who has her groceries delivered to her doorstep.  But as far as lunch today was concerned, I had to look at what I had around the house vs what I didn’t.20160609_124514

Well, you don’t have to be a rocket scientist to see there’s an abundance of zucchini piling up in the fridge.  It is the Summer of the Zucchini after all.  So I decided to experiment and make stuffed zucchini.  My Tam jalapenos are producing so I sauteed a few of them in a little vegetable oil, seasoning with a dash of salt and pepper.  To the jalapenos, I added some cooked ground sausage I had in the freezer.  I let the meat mixture cool before mixing it into a bowl of cream cheese and shredded cheddar.  For added flavor, I mixed in some grated parmesan, garlic salt, and pepper.  Having hollowed out the halves of 1 large zucchini and 2 smaller ones, I scooped the cheesy mixture into each zucchini boat.  After about 30 minutes in a 400 degree oven, it was time to determine if I was going to enjoy my lunch or experience a culinary fail.  I am pleased to say my stomach approved.  If I were to do it again, I might cover them for a bit in the oven and then uncover to finish baking.  It definitely isn’t the healthiest dish, but I would argue it’s healthier than eating a sausage and jalapeno cheese dip with chips.  Plus, it adds variety to a summer diet of zucchini & tomatoes and tomatoes & zucchini.

I was disappointed to see that the Tweet’s residence fell to its demise yesterday.  You may recall that my dad hung the birdhouse back on its post during his last visit.  A short time later, the Tweets began nesting in the cottage.  I have not seen the pair of Bewick’s wrens in quite some time.  I’m not sure if that’s because they sensed the instability in the house, didn’t appreciate their overeager new friend or were smoked out (I had smelled smoke in that corner of the yard at one point.).  It really is too bad.  Since the bottom separated from the rest of the birdhouse when it fell, I could see how much work the birds had put into the place.  For the record, Sid was no where near the house when it fell off the post.

Soles with Goals:  911.8 miles reported!

Happy National Doughnut Day!  To celebrate, I thought it’d be fun to make a batch of homemade chocolate cinnamon doughnuts.  The operative word being thought.  When the recipe said the dough would be slightly sticky, it was clearly understating the reality.  It stuck (and is still stuck) to everything!  I quickly gave up on the idea of rolling out the dough and cutting out proper doughnut shapes.  Doughnut holes seemed like a much better idea.  Rolling the dough into balls was definitely an improved option, but they didn’t exactly retain their spherical shape.  Long story short, I ended up with mostly small black hockey pucks that were crispy on the outside and perfectly doughy in the middle.  Yum.  Yum.  Please detect the sarcasm.   The first batch didn’t burn like the rest, but the middles were still doughy.  Hey, I tried!  But from now on, I think I’ll leave the art of doughnut making to the professionals!

Farm to Fork is Happening Here!

Sweet basil has been on my mind as salivatory thoughts of pesto have been rumbling from my stomach.  And so this morning, I picked the first of the season’s basil crop.  Now, I have never actually made pesto before, and as usual, I didn’t have all of the ingredients on hand and strayed from the instructions.  Yet even with my improvisations, I managed to make a pretty delicious product that looks and tastes like pesto!

For lunch, I spread my fresh pesto and some mayonnaise onto toasted wheat bread and added fresh-from-the-garden tomato slices.  It made a pretty delicious sandwich.  I love being able to walk into my backyard and harvest fresh produce for a meal, and I have to say, I am quite pleased with the yield from my $.20 packet of basil seeds.

You can find the recipe for my Garden Fresh Basil Pesto on the main Recipes page.  It’s delicious on sandwiches, with pasta, and even used as a pizza sauce!
