While I was back in Missouri, I commented to my family how impressed I was that my aunts knew how to build fires. So my younger brother decided it was time that I learned the fine art of fire building. S’mores were involved, so I eagerly accepted the challenge. First I was instructed to gather tinder from around the yard. I was then to utilize the log cabin technique in the fire bowl. Before long, I had successfully built my first fire and had a s’more in my belly.
A couple of nights later, my brother announced it was time for my fire building test. I was on my own this time. After a little trouble getting it to start, I actually built a remarkable fire. The coals turned out absolutely perfect for roasting marshmallows, and my brother even commented they would be perfect for cooking camper’s stew. Since I was in charge of the fire that night, the s’mores were under my control. We used the giant marshmallows, and I made sure we used enough chocolate to balance them. With perfectly roasted marshmallows and the right amount of chocolate, my s’mores were met with rave reviews. Dad even said it was the best s’more he’d ever eaten.
I was so proud of my fire, I text a picture of me building it to my aunts. Now, the photograph was taken in the early building phase and was no match to the blaze one of my aunts built and shared. So of course she commented on my puny fire. I went back to my brother who conveniently didn’t take any pictures of my fire in its glory. When I asked my family to back me with their eyewitness accounts of the fire, they found it more fun to torment me and say, “Meh, it was ok.” Arrrggg… I know I built a great fire, and they do too!

Home at last blogging with my boy! It feels good. Sid started yowling this morning–you know the gut wrenching moan that makes you think something is terribly wrong. When I went to see what on earth was the matter, he went into complete play mode. He’s just starving for attention and clearly knows how to get it. Since I returned home Saturday, he has had a lot to say, and I have had a lot of petting to do and a lot of head butting to endure. He does just fine on his own but does get lonely, and I certainly miss him when we’re apart.
While I enjoyed my time up north with family and friends, it was with a heavy heart I went. One of my best friends from college passed away from health issues, and it truly makes me sad. She was such an amazing human being. I take comfort knowing she’s in heaven and no longer suffering, but I will miss her dearly.
During my time away and being out of routine, I hope you enjoyed the adventures of Foody IV and his cat sitter. Personally, I found the saga hysterical. Foody made himself right at home and even provided his specialized spa services–a cross between massage and acupuncture. Despite his best efforts to win the affections of his cat sitter and a permanent residency in her home, Foody was eventually returned to his family. I’m sure he is loved, but Foody’s temporary life of peace and quiet is now back to chaos with three wild boys in the house. I wonder if the cat sitter sent him home with any bad habits–like sitting on the dining room table?!

So far, I think Robel Habte is my favorite Olympian. The 24-year-old Ethiopian swimmer made quite a splash with his performance in the Men’s 100 Freestyle. While he finished dead last in the field of 59, he’s an Olympic hero to me. The media has had a field day with his less than Michael Phelps-like physique, but you have to give the guy credit for diving in that pool, and personally, I don’t think 17 seconds off the top swimmer is really all that bad if we’re being realistic. And now, he is forever an Olympian.
I do enjoy the obscure stories that unfold during the games. Gotta love the diving pool turning green. Did they ever confirm that the kayaker did indeed tip over because he hit a couch in the water???

Coach Table Runner was bright eyed and bushy tailed this morning eager to write his SwG month 4, week 1 progress report. The moment he heard the crushed ice coming out of the refrigerator he made a mad dash to his position on the table in anticipation of his morning iced coffee. After that, he was all business. As I was trying to capture Coach’s thoughts on his team, my stomach was feeling a bit on the empty side. Last night I made a big batch of pancakes, but they just seemed rather unappealing this morning since I’m out of syrup. During “Blueberry Week” I had asked my mom for a blueberry sauce/syrup recipe only to find out she doesn’t use one.
The idea of a blueberry topping vs cheap white corn syrup was definitely more appealing for today’s breakfast, so I decided to attempt it on my own. Using equal parts water and sugar (basically a simple syrup), blueberries from my freezer, and some frozen lemon zest from last year’s lemon crop, I actually made a pretty delicious sauce for my pancakes. The zest from my homegrown Meyer lemons really made it special.
Nic’s Quick Fix Blueberry Sauce
1/4 cup sugar
1/4 cup water
2 cups blueberries (approximate)
lemon zest
Combine the ingredients in a sauce pan. Bring to a boil on medium heat. Reduce the heat to medium low and cook for 20-30 minutes. It will thicken. Enjoy on pancakes, waffles, ice cream…

Rio 2016! Go Team USA!
Ok, I confess, I didn’t watch the entire Opening Ceremony of the Olympics last night. I wasn’t going to miss the next to last episode of The Great British Baking Show season 3. It was the chocolate episode afterall! One of my favorites got sent home, so now my hope is solely in Ian to win it all next week. But until then, I’m sure I’ll be enjoying a lot of the summer games.
While I always enjoy the sport, this year’s host country holds a special place in my heart. When my younger brother was still in high school, my parents hosted a foreign exchange student from Brazil. A couple of years later, my brother, his friend, my parents, and I flew to South America for a visit. It was a trip I will never forget.
Seeing a different part of the world with a tour group is one thing, but experiencing a country with the locals is quite another. I do need to take a moment to point out that a pizza buffet where they bring the pizza to you concept is absolutely brilliant! Waiters and waitresses walk around with a variety of pizzas, and you take what you want. It’s awesome.
Probably my favorite part of the trip was when we went to an island where there were no vehicles allowed. The catamaran ride in extremely choppy waters to get there wasn’t pleasant but was memorable to say the least. Once we were finally there, it was amazing to see little monkeys running around free and to enjoy the beach.
While we were never actually in Rio, I’m still looking forward to seeing highlights of Brazil throughout the games. Go Team USA! Oh, and there’s no way I look a decade older than those boys in the first picture!

I just baked the best batch of Blueberry Muffins I have ever made. The texture is absolutely perfect, and you can tell the blueberries were frozen at the peak of their freshness. At this moment, I am quite glad I stocked up on fresh blueberries when they were on sale and took the time to freeze them. I guess another factor I should consider is that this is the first time I used La Paloma White Wings Flour (made in San Antonio) to make them. Of course the secret could have been in my pastry fork technique. Mom swears by that kitchen gadget. Or perhaps I was just really hungry. At this point I don’t really care why. I am just grateful to have enjoyed such a wonderful treat for lunch!

Sid and I received a very special surprise in the mail today. While I was unable to attend my family reunion in Wisconsin this past weekend, I did make it last year. After the 2015 campout, I emailed pictures to my Aunt Carol whose family had hosted. As a thank you, she had my aunt Linda sew an adorable kitty cat pillowcase for me. Aunt Linda so thoughtfully took it one step further and made an extra special Sid-sized matching pillowcase complete with his name on it. Thank you so much to Aunt Carol and Aunt Linda for making our day!

After all of my lumber jack workouts earlier this year, trimming the front trees this morning was a breeze (aside from the excessive heat). Eight bags of chopped up branches now line the curb awaiting pick up tomorrow. It was also a very special morning for Sid. Normally, Sid is not allowed outside in the front yard. But today, much to his delight, I let him out with me. He was an exceptionally good boy and loved it. At one point he sprinted into the garage. It was only then that I realized an old man was out for a walk around our cul-de-sac. I’m still perplexed as to where in the yard Sid managed to get burrs stuck in his furs! At least he hasn’t fussed when I’ve been pulling them off of him. To Sid, I’m sure it was well worth it.
